This is a favorite request from my co-workers. Thought you'd enjoy it.
1 cup grated paremesan cheese
1 cup mayonaise
2 cans artichoke hearts
Preheat oven to 350. Spray a round glass pie baking dish (pyrex) with cooking spray.
Drain artichoke hearts and place in chopper/dicer until finely chopped. Place all ingredients in bowl and mix.
Pour into baking dish. Bake for 30 minutes or until dip browns and is bubbly.
Serve with choice of crackers!
Enjoy.

Can I use frozen artichoke hearts? I have some in the freezer I need to use.
I make that, too, but I add some garlic salt to it, for a flavor boost. I think my recipe also calls for 8 ounces of shredded mozzarella.
Yes, you can use frozen, just let them thaw and drain, then chop them up.

Also, the mayo used makes a difference. I use Best Foods/Hellmans. Kraft mayo is too oily and it shows.

I buy a frozen artichoke dip very similar to that at Sam's Club; defrost it and then heat it up and stir before serving and eaten with flat, thin pretzel shapes about the size of Ritz crackers -- delicious!!
And I agree about Hellman's mayonnaise.
