You can choose your favorite ice cream for this. I used peppermint ice cream since it was for a Christmas dinner.
1 package white cake mix
2 cups melted ice cream--yes it has to be melted
3 large eggs
Spray a 12 cup bundt pan with cooking spray and dust with flour. Shake out the excess flour. Place the cake mix, melted ice cream, and eggs in a large bowl. Blend with an electric mixer on low speed for 1 minute. In crease mixer speed to medium and beat 2 minutes more, scraping the sides as needed. The batter should be thick and well blended. Pour into prepared pan and bake at 350 until it springs back when pressed lightly with your finger and pulls away slightly from the sides. (about 38-42 minutes.) Cool on a wire rack, right side up. Frost when cool with icing complimentary to your ice cream.
White Chocolate Peppermint Cream Cheese frosting.
6 oz. white chocolate, coarsely chopped
4 oz. cream cheese at room temperature
4 tablespoons butter at room temperature
1 teaspoon peppermint extract
2-2 1/2 cups confectioners sugar
Melt white chocolate in microwave, high power 1 minute. Stir with wooden spoon till smooth. Set aside to cool.
Beat cream cheese and butter with electric mixer on low speed till well combined. Add the melted white chocolate and blend on low speed until just combined. Add peppermint extract and sugar, blending till sugar is incorporated. Increase mixer speed to medium and blend until fluffy. Fold in up to 1/2 cup crushed peppermint candy, if desired.

I don't see why not. I'm not sure why the recipe called for white. I think next time I make it I will try a different cake and ice cream combo. I did peppermint because, well. Christmas. I think the icing was to die for--but I would leave out the peppermint extract for a different cake flavor.

Yeah it sounded good but I'm not a big fan of peppermint.. even for the frosting you might be able to add vanilla extract or even rum extract.![]()
