    I love torturing folks, I know.

    Sourdough French bread, fresh out of the oven, I've been doing cinnamon/raisin and whole wheat and filling my freezer, or at least with the stuff Rita's freninds haven't carried off or I took to work.

    She wants to make some garlic bread this weekend so I switched this time.



    (Like all my sourdough there is no added yeast, the yeast culture I've built up does all the leavening, it does take more time, about 18-24 hours but it's well worth it.)

    The humidity is quite low right now, less than 20%, I should have put a pan of boiling water on the bottom of the oven to prevent the splitting.

    I like the "splitting" effect, I thought that was on purpose. I can almost smell it....Mmmmm....

    The baking bread helps cover the fermenting smells, some mornings my kitchen smells like someone had a keg party in there the night before.
