I purchased a case of chicken backs. Started Tiegan off on them and chicken necks. She has been doing very well on these chicken parts now and some of my worry is subsiding... thank goodness.
I wante to express somethign about the "backs", I remove all the fat from the backs. The original weight of each back is anywhere from 8 to 10 ozs. a piece. Consistently the fat content is 40-50% of the total weight. I end up w/ 4 to 6 ozs. of RMB. Seems like a lot and a lot to pay for considering....
What are other's experience or thougths???????
Thanks,
Doug

I just take off the really big pieces. I don't take everything off. A friend of mine will get a case of backs from a plant for $.21/pound. Not a bad price so I really don't care. It's cheap enough.

That is a great price. I think I paid .45 cent a pound, which would make these .80 to .90 a pound on average.

I take off a lot of the fat too. Not all, but it does seem like an awful lot. :-\

I cant wait to move up North. I bought some backs today, each case of 4 backs totalled about 1-1.5lb for $1.50 with not a whole lot of fat. I take off most of it but it really isn't that much.
I plan on going to the butcher tomorrow to check out some better prices.

Why take off the fat?

That's kindof what I was thinking, but feel like I'm too new to this raw stuff to offer too much of a valid opinion, LOL. If feeding prey model, though, they'd be getting all of the fat if they were to actually kill and eat that animal as "prey," right? I have fed 2 turkey backs now, which are quite a bit larger than chicken backs, and haven't done a thing to alter them before slipping them into a bowl (which they have come right back out of and on the floor of a crate anyhow, LOL).Originally Posted by FallRiver

Most domestically raised chickens have a lot more fat on them than what they would find in a bird in the wild. On the backs I just take off that huge clump of fat. Anyway, that is what I was told when I started. I do leave some cause they would get some but, I just don't like that huge clump of fat on there.

Thats what I do, and what I thought. Oscar would be getting SOME fat, but that huge clump that makes up %50 of the neck/backs weight I don't feel is necessarry.Originally Posted by Yellow Boys Mom

The only thing I like those big clumps of fat for is when I make homemade chicken soup! Not for my boy though!
