3 15 oz cans of Black Beans, Drained
One Medium Onion
One Green Pepper
4 Cloves of Garlic
4 Tblsp of EVOO
1 1/2 Cups of Water or Broth
One 8 oz can of tomato sauce
One 15 oz can of Diced Tomatos
2 Tblsp of Red Wine Vinegar
1/4 cup of chopped Fresh Cilantro
Salt and Pepper to taste
4 to 6 Servings of Prepared Yellow Rice (I use the kind that comes in the yellow bag in the Spanish section)
Saute the Onions, Pepper and Garlic in EVOO until soft. Add the beans, tomatos, red wine vinegar, Water and Tomato Sauce. Simmer over medium heat for 30 to 40 minutes, then turn the heat down, add the prepared rice and cilantro, and stir frequently for 10 more minutes. I served it with Roasted Chicken and it was really good.
It's a friend's recipe for yellow rice and black beans. I copied it to add it to the menu this coming week.
